You may have heard of dauphinoise potatoes which are said to come from the dauphin and their penchant for potatoes in this particular form.

The Dauphin (pronounced dauphan) was not a ruler. he was a prince waiting his turn to become king of FRANCE. A soon to be king. His wife (princess) would be the Dauphine.
